Food insecurity is a sensitive issue, where the need is often hidden and unevenly distributed in different city neighborhoods or rural communities. It can also be temporal, with stretches of time where food is plentiful and others when it is not. This four-part lesson provides an opportunity to learn about food insecurity, starting with a general discussion and then focusing on needs at the county and local level. Students will evaluate food security needs in their community and think about ways to improve food access. They will also recognize that fresh, frozen, and canned produce can provide similar nutritional values.
